Last night’s dinner was so good, we repeated part of it tonight. These Roasted Tomatoes Gratin? These little things?
They are SO SO good! Here’s how you make them:
4 medium tomatoes, cut in half
Ground black pepper
1/4 c garlic and herb bread crumbs, Progresso
1/4 c grated Parmeson cheese (I used shredded)
2 T butter, melted
1 tsp bottled crushed garlic
- Preheat oven to 450 degrees F. Line a baking sheet with aluminum foil.
- Place tomato halves, cut sides up, on prepared baking sheet. Season with salt and pepper; set aside.
- In a small bowl, combine bread crumbs, Parmesan cheese, butter, and garlic. Spoon over tomatoes.
- Roast tomatoes in preheated oven for 10-12 minutes or until bread crumb mixture is golden brown. Enjoy!

Oh em gee. These are actually still in the oven (ha!) but I tried the mixture that goes into the shells and I pre-tasted the sauce to make sure it was one that I would like (I’m kind of picky about these things) and it’s all tasting fabulous so far. I think the flavors will fall in love, get married and create a beautiful thing. If not, there’s chicken on the stove and baby spinach for a salad. We’ll fill up on that instead. But I have a feeling this is going to be the beginning of a beautiful friendship.
